Fresh chives (fijngesneden)
Remove the core with an apple drill from the apples and cut then cut the apples into thick slices (about 2-3 per apple).
Beat the eggs in a bowl and season with salt and pepper.
Melt the coconut oil in a frying pan and pour in the eggs.
Season with the herbs.
Stir the eggs with a wooden spatula in order to get scrambled eggs.
Prepare the plates and place a thick slice of apple (or two), a slice of mackerel and some of the egg.
Be creative and make nice towers of the ingredients!
