Mix all ingredients into a sticky dough in the food processor.

Place the dough in the freezer for 15 minutes until it is firm enough to roll into balls.

Cover a large plate or baking tray with parchment paper.

Spoon 20 equal portions on the plate, possibly using a mini ice cream scoop or measuring spoon. Roll gently into balls. Finish the balls with finely chopped cocoa nibs (or finely chopped almonds, coconut grater, hemp seeds…).

Place the balls in the freezer for another 15 minutes or more until they are hard enough.
