I make this "nachos deluxe" of grilled zucchini with chicken and avocado at least once a week, usually after exercise. You can also serve them as a snack on a large tray to share. For a more carbohydrate-rich version, you can replace the zucchini slices with roasted sweet potato. Also delicious with smoked tofu or a soft-boiled egg for a veggie variant.
