2 more days until Christmas and I really can't wait! Finally a few days in a row with family and I get to cook all day long (my kind or party!) I have adapted the Christmas dinner recipes to my preference for plant / vegan food, so I don't have to worry must look for something I want / may / can eat. Now I can imagine that it is difficult to indicate to friends or family that you prefer not to eat meat or fish, let alone no animal products. I have also experienced this, I often felt a whine and did not feel like difficult questions. That's why I just ate, with the end result that I was not feeling well and had less energy the next day ... a shame! I have now learned that I have to open my mouth to get something done. The reactions so far have been very positive, family likes challenging cooking, as they call it! To make it easier for them, I always take a few dishes with me to the table. This way I know that I can always eat well plus I try to introduce my friends and family to vegan food in this way! We spend the holidays with my mother, as a thank you, Timo and I have suggested taking care of the Christmas breakfast. That will be a lot of different juices, fruit salads, oat and ginger cookies, banana pancakes (in the shape of a Christmas tree) and this baked oatmeal - a new favorite at our house, packed with healthy ingredients and it tastes like blueberry pie!
