One of the easiest bars to make is surely this chocolate bar with coconut. It tastes a bit like bounty but is slightly bitter due to the raw cocoa. Liva loves it and I sneak too. When I prepare her bowls in the morning to take to the day care center, I always give a sweet snack. This has been a hit for three weeks in a row! The day care center even asked if I could bring some extra pieces because the other kids liked them too! It's great that I don't have to worry about her eating unhealthy snacks, because this bar is made with all kinds of good ingredients. The coconut blossom sugar gives a delicious caramel flavor, while the tahini (sesame paste) makes them taste like nuts. A perfect combination! If you are not so keen on coconut blossom sugar, you can replace it with lucuma or mesquite powder. These are superfoods that taste deliciously sweet. I made them myself once with mesquite, great alternative but no longer kids-proof ..!
