Oatmeal doesn't really sound like a nice and summery breakfast, but let's face it, we can't really call it summer yet. That suits me right now because I still have a delicious recipe that I didn't dare to post anymore. Because on my site I really want to make a difference between winter and summer recipes. This weekend, however, it was raining cats and dogs, it was cold and gray outside and my stomach asked for a hot breakfast. Oatmeal was the answer! Few recipes are as common in our home as oatmeal (look in my recipe index and you will find 4 different oatmeal recipes). Of course we alternate well with toppings, milk and types of oatmeal. Yet there is a recipe that I always fall back on, simply because it is so incredibly simple to make. This porridge with chia seeds gives you a big energy boost in the morning so that you can start your day well. Something that I have been in need of lately (read: little one is teething and I therefore sleep very little!) I love to curl up on the couch this weekend with a bowl of warm oatmeal porridge and enjoy these tasty flavors together. The coconut milk and warm blueberries provide a wonderfully sweet taste, the oatmeal itself for a bite and the chia for all good vitamins and minerals! I can only say: try it quickly before summer really starts!
