Crispy sweet potato fries

Preheat the oven to 430°F and line a baking sheet with baking paper.

Wash the sweet potato and cut it into fries about ½ inch thick.

Put the fries in a bowl with warm water and salt. Let them soak for 15-30 minutes.

Drain the fries and pat them dry with a paper towel, put them in a bowl and drizzle with the coconut oil.

Mix the fries by hand to ensure that they all have a nice layer of oil.

Place the fries on the baking sheet, but make sure they all have some space in between. Do not place them on top of each other or against each other.

Bake the fries in the center of the oven for approximately 15 minutes, remove them and turn them all over. Be careful not to burn your hands!

Slide the baking sheet with fries back into the oven and bake for another 15 minutes. Open the oven to see if the fries are already turning brown; if not, turn on the oven grill and bake for another 2 minutes until golden brown and crispy. (Note: the baking time differs per oven, so keep an eye on the fries!)

Serve the fries with some coarse salt and perhaps some homemade mayonnaise. Enjoy your meal!
