Preheat the oven to 200 ° C. Spread half of the bacon slices over the bottom of a loaf tin, running the slices slightly up the edges.
Slice the bacon, dice the shiitakes, chop the onion, grate the carrot and slice the apple.
In a bowl, knead minced meat, onion, shiitakes, carrot, coconut flour, egg, curry and salt and pepper.
Divide the minced meat mixture over the bread tin. Place the leftover bacon on top until the meatloaf is completely covered.
Bake the meatloaf in 45 minutes, if necessary, drain the moisture that has run out during baking.
Serve the meatloaf with salad and fruit of your choice. (we used apple, but this can of course be anything)
