Vietnamese Pho

With this soup you literally imagine yourself in Vietnam. The Pho is a traditional soup that is often eaten. The basis for this soup is generally beef broth but chicken broth is also used. You could easily make this at home too! Make sure that all the herbs you use are really fresh. The dried varieties don't do justice to the soup.

Cut the onion and spring onion into half rings, finely chop the red pepper and fresh coriander and cut the back ribs into cubes. Bruise the fresh ginger.

Pour the beef broth into the slow cooker and add the beef ribs, onion, ginger, red pepper, cloves, star anise, cinnamon sticks and fish sauce.

Switch the slow cooker to the low setting and leave the soup to simmer for 8 hours.

Cut the zucchini into long strings with the help of a spiralizer. Add these to the hot soup and leave to stand for 2-3 minutes.

Divide the soup between several plates and garnish with the spring onion, fresh coriander and some lime juice.
