Handy for when you're on the go. Delicious raspberry fudge. At the same time you've already had a portion of healthy fats. For those who prefer, try using extra virgin coconut oil. I have a real sweet tooth. I like vegetables but I do look forward to my daily healthy snack.

Make sure that the coconut butter and the coconut oil are warm and the raspberries are at room temperature.
Put all the ingredients (except the pistachio nuts) into a food processor and blend until smooth.
Put the pistachio nuts in the bottom of a muffin or chocolate mold (either paper or silicone).
Pour the raspberry mixture into the molds.
Sprinkle with the nuts.
Leave in the fridge or freezer to set.
Best kept in the fridge.
