Roast beef with smoked tomato sauce

For the tomato sauce, cook the whole tomatoes in a hot pan for 15 minutes. The skin of the tomato will burn slightly and that causes a smoky taste.

Remove most of the skins before putting the tomatoes in a bowl. Crush the tomatoes with a wooden spoon.

Fry the thinly sliced onion gently until done in a little bit of oil. Add the two finely chopped garlic cloves, a teaspoon of chili powder, the coriander and a teaspoon of smoked paprika powder to the tomatoes and season with salt and pepper.

Brown the whole roast beef on all sides and then sprinkle with salt and pepper.

Place it in a dish in a 210°F preheated oven and let it cook slowly in two hours. The roast beef will be nicely rosé when the core is 131 °F. Use a core temperature meter and set it to 126°F or 127°F.

Remove the roast beef from the oven and let it rest for 15 minutes in aluminum foil: the meat will cook for another 4 or 5 degrees.
