Clean the fennel and slice it into thin slices with a mandolin. Put the slices in a bowl.
Squeeze the oranges.
Press and flatten the fennel seeds.
Mix the fennel with the orange juice, vinegar, oil, fennel seeds and a pinch of salt. Let this marinate for at least 60 minutes.
Heat a pan over medium heat with a little bit of coconut oil.
Cook the salmon in the coconut oil till it's done.
Divide the lettuce over the plates and place the marinated fennel on top of the lettuce leaves.
Place the salmon on top of the salad.
If desired, garnish with some fennel greens and freshly ground black pepper.
