Preheat the oven to 350°F.
Drizzle the spareribs with the olive oil and rub in well.
Mix the chili powder, paprika powder and garlic powder in a small bowl, together with a pinch of salt.
Grate the limes and add the rind to the herbs and spices.
Rub the herb and spice mixture over the spareribs making sure that everything is coated with a thin layer.
Place an oven dish in the oven with a roaster on top. Lay the spareribs on top of the roaster.
Bake for two and a half hours in the middle of the oven.
Grill under the grill or on the BBQ, for a few minutes, if you like them cripsy
