Chop the mint leaves and cut the strawberries into quarters.

* Coconut cream is obtained by leaving a can of full-fat coconut milk (with a coconut percentage of&gt; 70%) open in the fridge overnight. The coconut fat then separates from the water and comes to lie on top. You can scoop this off and use it in recipes that require coconut cream. The cans of coconut milk from Aroy-D lend themselves particularly well to this and are available at most supermarkets.

Mix the strawberries in a bowl with the mint and leave them for a while so the flavors can blend.

Beat the coconut cream together with vanilla extract and stevia or honey with a hand mixer until you get a firm whipped cream consistency. This works best when the ingredients are cold

Divide the strawberries on dishes and add some of the whipped coconut cream on top.
