Sweet potato stew with spinach

 Peel the sweet potatoes and cut them into cubes. Boil them in a pan of water for about 10 minutes with all the potatoes just under water. The potatoes are cooked when they are soft. If you can easily prick it with a fork then they are done. 

 In the meantime, crumble the goat cheese and cut tomatoes and the spinach. When the potatoes are cooked, drain them and mash them with a &#39;pestle&#39;. Then stir in the spinach (which will shrink with the warm potatoes), the goat cheese and tomatoes. 

 Optionally add an organic sausage or a sausage from the vegetarian butcher. Season with salt and pepper. For garnish, sprinkle the walnuts over the stew.
