Ingredients: to taste Celtic sea salt; to taste Black pepper; 1⁄2 piece Red pepper (sweet); 225 g Sweet potato; 75 g Smoked bacon strips; 100 g Endive

Endive stew

 Peel the sweet potatoes and cut into large cubes. 

 Meanwhile, wash the bell pepper and endive and chop finely. 

 Heat the frying pan and fry the bacon strips (without oil) for 5 min. Drain the potatoes and leave a little bit of cooking liquid in the pan. Mash with a pestle to a puree. Spoon the bell pepper and endive into the puree and heat for about 3 minutes on low heat. 

 Season with salt &amp; pepper if desired. 

 Divide the stew over the plates with the bacon on top.
