Sweet potato hot dog

 Preheat the oven to 200 degrees and clean the sweet potatoes on the outside under the tap. 

 Pat dry and cut off the buttocks. Grease them completely with olive or coconut oil and pierce the sweet potato in a number of places with a fork and wrap them in aluminum foil. The sweet potatoes now go into the oven for about 45-55 min. 

 (I have a steam function on my oven and steamed the sweet potato in 10 min. Also first pierced the sweet potato with a fork) 

 Meanwhile, cook the red cabbage as indicated on the package and cook the 2 eggs. 

 Fry the chipolata sausages until tender in a little (coconut) oil 

 Chop the onion. Cut the onion in half rings. Fry them in some coconut oil together with the bacon. 

 cut the eggs into quarters and cut the gherkins into small slices. Halve the cherry tomatoes. 

 Make the hot dog sauce by mixing the mustard and mayonnaise together. 

 When the sweet potatoes are cooked, cut them open and fill them with red cabbage, the chipolata sausage, egg wedges, onion / bacon and the pickle slices. 

 You serve the other ingredients separately so that you can supplement them later or to eat separately.
