I am a real chocolate fan and I prefer my chocolate mousse to be as dark and pure as possible.

Decadent Paleo chocolate mousse

Have 4 glass jars or dessert bowls ready. 

Put the avocado, dates, honey and a cup of coconut cream into a food processor and blend until you have a smooth mixture. 

Add the cocoa powder, instant coffee (if using), sea salt and 1 tablespoon of vanilla extract and mix again until smooth. 

Pour the chocolate mousse into the jars and leave to set for at least 4 hours in the fridge.  

Before serving make the whipped coconut cream. Put the remaining coconut cream and (if liked) 1 tablespoon of vanilla extract and 2 tablespoons of honey in a bowl and whisk until it has the consistency of whipped cream. 

Put this in a piping bag and leave in the fridge for a few minutes. 

Before serving, pipe the coconut cream on top of the pots and sprinkle with cocoa nibs!
