A green smoothie has been my breakfast for at least a year. I explicitly do not write a favorite or tastiest for this because it certainly was not. When I made the switch to plant-based foods, the smoothie hype just started and everyone, everyone really was talking about green smoothies. Kale, spinach, endive, everything had to be thrown in and then thrown back in one go and washed down with some water. Because mine was certainly not tasty. At some point you get used to flavors and that's how I got used to my green smoothie in the morning, but enjoy? No absolutely not! When I went to live with Timo (and so I also started making breakfast for him) I had to get more creative because no way he went to drink this green "derrie". This brought the green smoothie to the background and made way for banana ice cream, oatmeal, acai bowls and other breakfast smoothies. Until I was at Roots two weeks ago for our veggie burger workshop. Here the participants got a green smoothie as a welcome drink and it was still delicious! Inspired I went home after the workshop and the next morning I was fine again, with my blender, in the kitchen, this time looking for a tasty recipe for the famous green smoothie. Of course I will not share the recipe for the Roots drink, you can come and taste it yourself on December 10 at the second veggie burger workshop !! No this recipe is one of my own and I have to say, this smoothie was definitely not a punishment to drink!
