Medjool dates (pitted)
Peel the unsalted pistachio nuts.
Combine the dates, cashews, pistachios, 1 teaspoon of matcha powder, vanilla and salt in a food processor.
Grind into a sticky, fine mass. If necessary, add a spoon of water to make the mixture slightly stickier.
Place 2 tablespoons of matcha powder in a shallow dish.
Roll a small ball of the mixture and roll it through the matcha.
This recipe is sufficient for about 2 small jars of matcha balls.
