An amazing but super delicious combination of shrimps with the sweet peach. An all year round recipe. This is a perfect recipe for a lunch or starter. Or whenever you feel like it. Do you often use fruit in savory dishes?
Large shrimp (peeled and washed)
Apple cider vinegar
Red Currants (optional)
Slice the peach into thin wedges.
Divide the lettuce and peach over 4 plates.
Heat the coconut oil in a frying pan.
Sprinkle salt and pepper over the shrimps and fry for a few minutes.
Remove the shrimps from the pan and divide over the plates.
Temper the oil with the vinegar and a tablespoon of water. Add the honey and stir until the dressing is ready.
Scatter the red currants and mint over the salad.
Finally, spoon the dressing over the salad.
