Mushroom soup with bacon

 Heat coconut oil in a stockpot. Chop the onion and fry it in the coconut oil until translucent. 

 Meanwhile, chop the garlic and add it to the onions together with the thyme and cardamom. Bake for a few minutes. 

 Clean the mushrooms with a piece of paper and cut into quarters. Add to the pan and cook for 3 minutes, stirring continuously. 

 Add the stock and bring to a boil. Turn the heat down as soon as the soup boils and let it simmer for 15 minutes. 

 Remove the pan from the heat and use an immersion blender to mash the soup. Then return to the heat and add the coconut milk and a good pinch of pepper. 

 Meanwhile, fry the bacon strips in a frying pan. 

 Serve the soup with the bacon strips and possibly some extra coconut cream.
