My favorite starter, a delicious combination of flavors. Vitello tonnato was originally made from veal, but if you can't find it (or prefer not to use it) you can, of course, use a substitute. The combination of meat and fish with the creaminess of the mayonnaise and the salt-acidity of the capers is truly a match made in heaven.
