Lemon juice

Preheat the oven to 400℉.

Melt the coconut oil and leave to cool.

Clean the shallots and cut in half.

Mix the coconut oil, honey, Italian spice mix, paprika powder, chili flakes and a pinch of salt and pepper.

Lay the chicken thighs, skin side up, in an oven dish.

Divide the spice mixture over the chicken thighs and rub it in.

Arrange the garlic and shallots around the chicken thighs.

Tear the rosemary leaves off the branches and sprinkle over the chicken thighs. Sprinkle with lemon juice.

Cover the dish with aluminum foil and place in the fridge for at least 1 hour. This allows the flavors to soak into the chicken.

Season the chicken thighs with salt and pepper and bake in the center or the preheated oven for approximately 30 minutes until cooked.
