Ingredients: 1 piece Egg; to taste Celtic sea salt; to taste Black pepper; 1 Tbsp Coconut oil; 1 clove Garlic; 200 g Spinach; 1 Tbsp Ham cubes; 1⁄2 tsp Paprika powder; 2 slices Bacon; 1⁄2 piece Sweet potato; 1⁄2 tsp Garlic powder; 2 Tbsp Olive oil (mild); 1⁄4 tsp Cayenne pepper; 1 Tbsp Pine nuts; 2 pieces Sun dried tomatoes

Eggs in a (spinach) nest!

 Preheat the oven to 200 degrees Celsius. 

 Wash the sweet potato (s) and cut into cubes (skin can remain if you like it). 

 Place the sliced sweet potato cubes in a bowl, melt 1 large tablespoon of coconut oil and pour over the sweet potato cubes. 

 Sprinkle paprika over the sweet potato to taste. 

 Divide these cubes over a baking tray lined with baking paper! 

 Put the sweet potato cubes in the oven for about 40 minutes. 

 Meanwhile, fry the spinach in a frying pan with some coconut oil and garlic powder until it has shrunk reasonably. 

 Drain well in a colander and squeeze the moisture out of the spinach with a fork as much as possible. When using frozen spinach, also squeeze the moisture out of the thawed spinach as much as possible. 

 Cover the bottom of the baking dishes with bacon. Depends on the bacon how many slices you need. I baked the bacon briefly before they went into the baking dishes. 

 Divide the drained spinach between the 2 baking dishes. Add some salt and pepper to taste here plus the crushed garlic. 

 Now add about a tablespoon of ham cubes per bowl. 

 Pour a very small splash of olive oil over this (not too much). 

 Break an egg over the spinach mixture and sprinkle with paprika, cayenne pepper, pieces of sun-dried tomato and pine nuts. 

 When the sweet potatoes have cooked in the oven for about 15 to 20 minutes, add the spinach baking dishes and mix the sweet potato cubes again. Every oven is different, so keep an eye on it. 

 The spinach saucers are ready when the egg white has set. (about 25 min).
