Sour meat. In other words, in Limburgish: "Zoervleisj". Sour meat resembles pot roast and hash. Only now we marinate the meat in advance in a vinegar (acid). Hence the name and what makes the dish extra special. Our biggest challenge for this dish was: How do we replace the gingerbread & apple syrup? As a Culicooler, we naturally do not feel like eating all those unhealthy sugars. But we love to use the delicious spices of the gingerbread. That is why we add fresh ginger, cinnamon and coriander powder separately. As an extra touch star anise for a little drop flavor. Apple syrup is also a tricky one. For example, you could slow cook an apple with it. We only worked with honey to counteract the acidity of the vinegar. Oh yes, and then that meat. By marinating it in advance and thanks to your slow cooker, this meat falls apart quickly. Awesome structure. Enjoy! Delicious with pumpkin fries or sweet potato fries.
