Do you know this problem? You feel like a banana but it takes so long before they are really ripe and once ripe they are soon too soft! This happens to me weekly. On Sunday I buy bananas for the whole week (5 kilos of bananas is nothing at our house!) On Wednesday they are ripe and on Friday they fall apart. Friday is also the day that I often make banana bread, bananas cannot be soft enough for this, plus they have the best taste. What I have left after that I throw in the freezer .. because I can eat banana ice cream every day! First I cut the bananas into pieces, put them in a plastic container and freeze them. Ideal if you don't have dessert at home but do want a nice appetite after dinner or want something special for lunch! Today the recipe for my banana superfood bowl with mango! Love, Sanne
