The sweet potato (or sweet potato) is hip! More and more often I see them in the Dutch vegetable departments. Justly! Because sweet potatoes are very tasty and super healthy! Sweet potatoes are originally from Mexico where they are used in many different dishes (think salads but also pancakes and even chips are made). In the Netherlands you will mainly find light yellow and red potatoes. I always eat the red version because I like it a lot better. Sweet potatoes are healthy! They are packed with fiber and vitamins. An example of this is vitamin A (this vitamin keeps your skin clean!) And vitamin C. They also contain calcium, magnesium, potassium, a lot of antioxidants, little fats and they are free of gluten. If you are struggling with diabetes, sweet potatoes are a lifesaver. They prevent a high insulin peak which makes them perfect as a snack or as an addition to dinner. One of my favorite snacks lately is sweet potato fries!
