Slice the mushrooms and shiitakes and finely chop the garlic and fresh sage.
Place the onion, mushrooms, shiitakes, garlic, cloves and 1 tbsp sage in the slow cooker. Put the chicken breasts on top and pour the stock over them.
Switch the slow cooker on the low setting and leave the dish to cook for 4 to 5 hours.
Take the chicken breasts out of the slow cooker and pull the meat apart.
Puree the vegetables and the stock with a hand blender into a smooth sauce. Season to taste with salt and pepper.
Stir the chicken through the mushroom sauce and garnish with 1 tbsp of fresh sage.
TIP: Delicious with sweet potato or zucchini noodles. Or with cauliflower rice.
