This pudding is at its best when you make it the night before: the chia seeds will be optimally saturated with the moisture from the coconut milk and the pudding is nice and thick. It only takes 5 minutes to make the pudding, and if you prepare it late at night, you can eat immediately in the morning. With the toppings you can of course vary endlessly, so you can have something different every day.
