Fluffy Marshmallows

Take a brownie dish or square baking dish. Grease it with some olive oil and then cover the dish completely with baking paper (the oil ensures that the baking paper sticks better to the edges, the marshmallows get a better shape and the mixture is easier to distribute). Dust the baking paper with arrowroot.

Pour ⅖ cup of water into a large mixing bowl and sprinkle the gelatin powder over it,

Heat ⅖ cup of water in a saucepan together with the honey. Bring to the boil. Keep an eye on the pan to prevent it from boiling over.

Boil the mixture to a temperature of 240°F, a sugar thermometer is handy to use. It takes approximately 10-15 minutes to reach this temperature.

Carefully pour the hot honey mixture into the water with gelatin in the mixing bowl, immediately start beating (use an electric (hand) mixer for this).

Beat the mixture constantly, at the highest setting of the mixer. It increases enormously in volume and becomes nice and fluffy.

After about 5 minutes of beating, add the beet powder (or another condiment of your choice), vanilla powder and salt. Keep beating.

If the mixture is firm enough to stand on its own, it is ready. Now it's time to execute the next steps quickly.

Take a spatula and scoop the marshmallow mixture into the baking tin that you have prepared. Smooth the mixture as much as possible. The longer it takes you to do this, the stickier the mixture will get.

Dust the top with arrowroot and put the marshmallows in the fridge for at least 4 hours to become firm.

Cut the marshmallows into equal pieces with a sharp knife. Dust all the pieces with arrowroot to prevent them from sticking together.
