Cut the cod into cubes.

Chop the garlic cloves, parsley and coriander.

Cut the bell pepper into cubes and cut the cauliflower into florets.

Grate the cauliflower florets into rice-sized grains in a food processor.

Heat the coconut oil in a wok or skillet and fry the garlic and peppers until the peppers have softened.

Add the cauliflower rice and cod and fry for 3-4 minutes until the fish is cooked through and falling apart.

Finally, mix the parsley, coriander, lemon juice and lemon zest into the dish. Season with salt and pepper.
