Cut the cucumber into slices and the chives.

Preheat the oven to 200 ° C and line a baking tray with parchment paper.

Peel the plantains and cut them into slices. Mash together with the coconut milk, coconut oil and salt until smooth.

Spoon a full spoonful of the mixture onto the baking sheet and smooth to form a small round pancake. Repeat until the mixture runs out, or until the baking sheet is full.

Bake the pancakes for 15-18 minutes until golden brown and done.
