Cut the cauliflower into florets, the onion into half rings and the garlic into thin slices.
Preheat the oven to 200 degrees Celsius and line a baking tray with parchment paper.
Mix the cauliflower with onion, garlic, thyme, cumin, pepper, salt and coconut oil and spread over the baking tray. Roast in 1520 minutes
Put the pasta in a large pan, pour the water on it and bring to a boil. Cook gently until tender in 15 minutes.
Heat coconut oil in a frying pan and fry the salmon fillets in rosé for 23 minutes per side.
Drain the pasta and divide it between plates. Mix in the roasted cauliflower and olives and place a salmon fillet on top. Serve immediately.
