Very refreshing on a hot summer's day, but delicious at anytime, this cold and spicy Thai soup made from spinach and cucumber. Personallly, I find this a really delicious soup, easy to make thus ideal for a weekday lunch or dinner. Try serving it with grilled shrimps on top.
