Clean the mushrooms and cut in half. The larger ones you can quarter. Put the mushrooms together with the olive oil and thyme in a small bowl and stir.

Fry the bacon in a dry frying pan until crispy and cooked. Leave the bacon to drain on a piece of paper towel.

Break the eggs into a bowl, add the almond milk and whisk together thoroughly.

Put some coconut oil into a frying pan, heat on a medium-high heat and fry the mushrooms until nearly ready.

Move the mushrooms to one side of the pan, pour in the eggs and keep stirring until they are scrambled.

Divide the arugula over 2 plates.

Slice the avocado lengthways and destone. Cut the flesh into slices and place half an avocado onto each plate.

Divide the bacon, eggs and mushrooms over both plates. Finish off with a pinch of salt and pepper.
