Fish dishes
Oven dish
Not just very tasty but also an interesting presentation. Serve these white fish parcels with cauliflowr rice and stir fried vegetables or a green salad for a delicious meal. They go with almost everything. Sweet potato french fries, for example.
Coconut milk
200 ml
Fresh coriander

Lemon Grass
2 stalks

Fresh ginger

Preheat the oven to 375°F and get the baking tray ready.

Remove the outer leaves of the lemon grass.

Cut the red pimentos into slices and lightly beat the egg.

Blend the coconut milk, coriander, lemon grass, garlic, ginger, lime juice, salt and pepper until smooth.

Place the fish fillets in a dish and pour the marinade over them. Leave to stand for half an hour. In the meantime you could make the cauliflower rice.

Take 4 sheets of baking parchment and fold them in the middle. Cut a half heart out of the parchment so that when you unfold it you have a heart-shaped piece of paper.

Place a piece of fish in the center of the heart. Spoon some of the marinade and divide the red pimentos over the fish.

Spread the beaten egg onto the edges of the parchment and fold to enclose the filling.

Place the 4 parcels on the baking tray and bake for 15 to 20 minutes.

Any leftover marinade can be heated and served separately.

Garnish the fish with the coriander. Enjoy!
