Creamy tomato soup with crispy ham

Chop the onion, garlic and parsley. Heat a frying pan with a teaspoon of ghee and briefly fry the onion and garlic. Finally, add the parsley. Remove from the heat and put the contents in the slow cooker.

Cut the tomatoes, carrots, celery and leeks into small cubes and put them in the slow cooker together with half a liter of water, salt and pepper. Cook for at least 4 hours at the highest setting.

After 4 hours (or longer) you can puree the soup with an immersion blender.

Preheat the oven to 390°F and place the slices of ham on the baking tray with parchment paper. Slide in the oven for about 10 minutes or until the ham is crispy.

Serve the soup together with the crispy ham.
