The ideal of a slow cooker is that it can stand on high heat for hours without having to keep an eye on it. For example, one evening we enjoyed a Chicken Hawai Culislow dish and thought of making a chicken stock from the leftover bones. No sooner said than done. At 8 p.m., the slow cooker was on for a stock that would be ready in 20 hours. That night we slept wonderfully with aromas of chicken stock around us. This also applies to our Spanish neighbors. Haha!
