The Spanish butcher in Malaga asked Stijn how much sausage he wanted. Instead of indicating how many grams Stijn said in his best Spanish: "Un Rondo". Not exactly Spanish, but the butcher understood that Stijn wanted so much sausage, so that he could make a nice round on the barbecue. That is why we call this dish ´Rondo Longaniza´. "Rondo" for the round and "Longaniza" was the sausage we had. But you can use any sausage you like. As long as they are tied together with a string and you can put them in a circle on the barbecue. Of course, ask the butcher whether the sausage is gluten-free, sugar-free and lactose-free. The originality of the 'rondo' will certainly be appreciated by your guests and it tastes delicious!
