Ingredients: 1⁄2 Tbsp Honey; to taste Celtic sea salt; 1 clove Garlic (pressed); 1⁄2 piece Spring onion; 1⁄4 piece Red pepper (hot); 1⁄4 piece Lime (juice); 1⁄2 Tbsp Fish sauce

Sweet Chili Sauce

 Chop the red pepper and squeeze the garlic cloves. 

 Put everything in the mortar and add a pinch of salt. 

 Mash everything until it is some kind of chili paste. If you do not have a mortar, try to cut everything as fine as possible and if necessary press it flat. 

 Pour everything into another bowl (if your mortar is large enough, you can also finish your sauce there). 

 Then add 1 tablespoon of honey. You can always do 1 extra later if you want it sweeter. 

 Cut the spring onion into rings. You can cut it a little smaller, depending on what structure you like. Especially tasty if it is slightly crispy in the sauce. 

 Mix everything well and you have a delicious Sweet Chili Sauce.
