I'm a fan of hummus, really a huge fan! The texture, the taste, the simple recipe and of course the fact that it is made from chickpeas (tasty and healthy)! For a long time I made "ordinary" hummus, a little olive oil, a little lemon juice, some herbs and a can of chickpeas. Meanwhile, vegan cooking has become easier for me and I am varying a bit more with my old familiar recipes. Time to give my hummus a different taste and color. So today a delicious recipe for beetroot hummus. You may be thinking, gosh, weird combination, but trust me the sweet taste of beetroot along with fresh lemon and chickpeas is really a top combination!
