A delicious beet soup is easily made, with just a few ingredients you can make your own broth and with the good spices and herbs you can't go wrong. Perfect if you are not yet very familiar with easy, tasty and vegetable cooking. Take the base of this soup, add vegetables, possibly a (sweet) potato or beans and you're done! I have eaten this beet soup a lot when I didn't know anything about vegan food. I often alternated, beets with lentils, beets with quinoa, beets with beans and beets with sweet potato. I never ate exactly the same thing for 2 days in a row! In the meantime, cooking is going a bit better for me (luckily!) But I still can't get enough of this easy soup. It is just so incredibly delicious and the fact that I have a go-to dish that never fails is also nice! This beetroot soup is one to remember! Because do you sometimes have little time or do people come to eat at the last minute? Then this is your lifesaver!
