Last night I made broccoli soup for the first time. I've tried many different soups, but broccoli soup never seemed such a treat. How could you make a soft, full soup from a stump? I am no longer so impressed with trying new recipes. I am quite familiar with making a top recipe out of a failure, so I tried the broccoli soup and I can tell you, it was absolutely not wrong. I added a potato for a creamy texture but otherwise it is not as green as it looks (think leeks, zucchini, broccoli and mint!) It has become a great healthy soup, packed with vitamins and minerals like magnesium, iron and different b vitamins. What made it a perfect ending to a busy day! To attempt? Certainly do!
