Very nice that it is spring, but it doesn't feel that way at all. So until the sun shines I will continue to make tasty warm, winter dishes and of course write nice blogs about this. Last weekend I wanted to make a soup for Liva, she loves spinach and broccoli so decided that this should be the basis. She hates a "detox" soup with only vegetables, so I took borlotti beans as a base. A try that really worked out well because this soup was bizarre and ate up in no time! If you are not a fan of borlotti beans or beans in general, try this soup with sweet potato. The combination of spinach with sweet potato is very tasty and perhaps just as special as spinach in combination with beans!
