It is weekend and that requires a delicious breakfast! If you know my recipes, you may already know I'm a sucker for banana pancakes, oatmeal waffles and acai ice cream on Sunday morning. Since we have an hour today before we have to get back on the road, I wanted to try something else. There was still some stale bread and what do you make with stale bread? Exactly! French toast! Did you know that vegan French toast are easy peasy to make and also not unimportant, very tasty! I used to think that you could only make French toast with egg, luckily nothing could be further from the truth. Instead of egg, just use chia seeds and instead of sugar as a sweetener, mash a very sweet banana through the mix. You can use this recipe as a base, just add your favorite spices and change with the topping for variety! DID YOU KNOW THAT VEGAN SWEET BREASTS ARE EASY PEASY TO MAKE AND ALSO NOT IMPORTANT, LOVELY TASTY! For example, I love the combination of banana and cinnamon, but I imagine that spice, turmeric, coconut blossom sugar and vanilla will taste great too!
