Ingredients: 125 ml Coconut milk (can); 1⁄4 piece Mango; 1⁄4 piece Pineapple; 3⁄4 Tbsp Gelatin powder

Mango pineapple mousse

Heat the coconut milk in a saucepan and stir the gelatin powder through. Bring to the boil, simmer for one minute and then remove the pan from the heat.

Peel and take the kernel from the mango and cut the mango into cubes. Also dice the flesh of the pineapple. Place the mango and half of the pineapple in a large bowl and then puree this with a hand mixer.

Pour in the coconut mixture and puree again with the hand mixer until you have a smooth, airy mass.

Let it settle in the fridge for a few hours. Make beautiful quenelles from the mousse and serve with the remaining pineapple.
