Preheat the oven to 345°F.

Slice the chipolata sausages and dice the sweet potato. Finely chop the fresh sage. Beat the eggs.

Bake the bacon cubes in an ovenproof pan. Add the sausage slices and fry them in a few minutes.

Add onion and sweet potato and fry for 3 minutes.

Stir sage and spinach into the dish and pour the beaten eggs over it.

Let the frittata cook in the pan for 3-4 minutes, over low heat. Then place the pan in the oven and bake the frittata for 25 minutes until golden brown and done.
