Pumpkin ice cream with pecans

Bring the cubes of pumpkin to the boil in a pan of water and let them cook gently for 6 to 8 minutes.

Drain the pumpkin and combine with coconut milk, coconut blossom sugar, cinnamon, mixed spices and vanilla powder in a blender. Puree until smooth.

Allow the ice cream mixture to cool completely in the refrigerator for approximately 2 hours.

Then follow the instructions of your ice cream maker to make soft ice cream.

Garnish the ice cream with the crumbled pecans.
