Preheat the oven to 325°F and line a baking tray with baking parchment.

Cut the onion into half moons.

Mix the tapioca, salt, yeast flakes and coconut flour in a large bowl.

Add the olive oil and warm water and mix again.

Next add the egg and mix until you have a smooth dough.

If the dough is too thin keep on adding 1 tablespoon of coconut flour at a time until it has reached the desired thickness. Wait a couple of minutes after each addition as the coconut flour needs time to absorb moisture. The dough should be soft and sticky.

Flour your hands with the tapioca. Using a spoon put 1-2 tablespoons of the dough onto the palm of your hand. You can make about 7-9 buns from the dough.
The dough is very soft and sticky but having floured your hands you carefully roll or fold the dough into balls.

Place the rolls onto the baking tray and divide the onion rings over the top.

Bake in the preheated oven for 35 minutes and serve warm.
